I use it to define for engineers what the ideal server and network architecture looks like. You can draw the connectivity a million ways; my layouts have the special feature that they can (generally) be exported to PNG and inserted into PDF documents without losing legibility.
Lately, I also use it instead of the default PowerPoint drawing tools, so my presentations to clients are that much more polished.
All MS products suck; because Visio was already on version 4 before MS bought them, it sucks a bit less.
